Sous Dine

NEIPA — 6.2% ABV — 16 IBU — Mosaic, Cascade, Citra & Simcoe Hops

Four hops in one dry-hop, and it shows. Mosaic and Citra bring berry, mango and grapefruit; Cascade adds a lighter pine and citrus edge; Simcoe layers in dank passionfruit and resin underneath. Hazy, soft, and stacked with fruit from every direction — one of our busiest hop bills, built for people who want it all at once.

Sous-Dine is another summit that towers directly over the brewery, its cliffs visible right from our door — much like Sur Cou, just a different face of the same view. Up top, the mountain turns into something else entirely: a vast, gentle limestone plateau scattered with wildflowers and roaming ibex, with a 360° panorama out to Mont Blanc. A rugged wall from below, wide open once you're up there. Sounds about right for this beer too.
